Corned Beef & Cabbage

Last night I made corned beef, cabbage and potatoes for dinner. I've never prepared an St. Patrick's Day meal, but saw the recipe and thought, why not? I do have some Irish heritage (or so I'm told by my dad). I have no idea what makes corned beef "corned", and I'm sure that it is not the healthiest meal around, (salty AND fatty) but it tasted pretty good! My son LOVED it.

Here is the recipe, just in case any of you feel like trying it for the next Irish event you're invited to. The recipe lists 2 ways to do the beef and the cabbage, I followed the baking method for the beef (very easy!) and the sautee method for the cabbage (also easy). Mmmmm!
